Secret Butcher's Cuts for Labor Day
Because your Hawaiian shirt still fits and gold-plated aviator sunglasses are always in fashion, there's still time for one more summer holiday. It's Labor Day Weekend! Keep the plug in the pool and come over to the Goose to stock up for one more hot 'que this weekend.
We'll have house-smoked andouille, venison sausage with bacon and rosemary, and Merguez, plus baby back and spare ribs fit to squeel on your hot irons. Come and get it...limited availability, while supplies last, for a limited time offer, 50 cents for the first minute, $1.99 for each additional minute, standard text rates apply.
But we've also lined up some big--flavor--little--change beef cuts that are too good to be kept a secret. These are the cuts that butchers serve on Labor Day. They eat like kings but pay like paupers.

Cowgirl Steak
Nestled above the ribeye is a tender steak packed with rich, meaty flavor. But it takes time & skill to carve the cap of the ribeye and reveal this well-marbeled muscle that's been overlooked and ignored. Our edition of the Joy of Cooking doesn't even mention the cut, and Larousse only points it out once in his otherwise encyclopedic Gastronomique. Thanks to Chris' expert skills and good appetite, the Goose is stacked with this incredibly tasty and tender cut which we've named the Cowgirl Steak. We dredged them in green herbs, extra virgin olive oil, and a bit of lemon zest & garlic so they're ready for your hot grill. Yeehaw!
Hanger Steak
The original "butcher's steak," this is the cut that lucky Frenchmen used to find served up next to pomme fritte in the humble brasserie near the village meat market. It's a thick, rough and tumble kind of cut, but the flavor is dense and thin layers of tenderizing fat marble each portion perfectly.
Flank Steak and
Skirt Steak
You might be more familiar with these cuts south of the border. Yes, they could fill your fajita, but there is muy mas on order from these rich muscles. Butchers know that a quick, high heat sear leaves the flank tender and loaded with flavorful juice. Give it a minute over the hotest part of your grill and this steak will deliver mucho beef flavor for not much dough. The Skirt has its own super-meaty flavor so it can stand up to big marinades like peppers, garlic, and spices. Stuff and roll it or let it sizzle flat over high heat. Its a flavor-packed payoff for not much payout.

Labor Day should remind us of several things, including...
1. It's time to start thinking about your halloween costume.
2. You can't judge a worker by the color of his collar.
3. You can't judge a wine by the dollar on the bottle.
So in the spirit of Everyman, Gabe has selected some hard-working, high-value, low-cost wines that over deliver on all the greater things that we get from our work: quality, persistence, and satisfaction.
2008 Sitios de Bodega Con Class
Rueda, Spain $9.50 91 points Stephen Tanzer...yawn *
You'll want something refreshing to drink while grilling your (insert your favorite cut here), and Sitios is it. This blend of organically grown Verdejo, Viura, and Sauvignon Blanc is night harvested and destemmed by trolls (okay, just kidding about that last part, but read on...the story gets even better). Cold fermented in all stainless steel keeps this vibrant blend boasting tons of citrus, gooseberry, pineapple, herbs and white pepper in a crazy-juicy, refreshingly crisp and bright style. Really, really good pre-barbecue sipper. If you must, pair with light salads, fresh cheeses, and grill tongs.
2006 Cuvee de Peņa Vin de Pays de Pyrenees
Orientales, France 3 litre box...that's 4 bottles $29.75

 At the equivalent of $7.50/bottle, it's nearly impossible to find wine at this price that speaks so eloquently of its home (or terroir). The Grenache, Carignan, and Syrah grown in Southern France along the border with Spain are blended for a medium body with smooth tannins and a substantial finish. The fruitiness of dark plum and blackberries compliment earthier flavors of smoke, tar, and leather. Truly shines with food, especially grilled meats! Don't be scared off by a box. For Bacchus' sake, Bobby Parker drank this stuff, and liked it! Come on people.
2007 Powers Cabernet Sauvignon
Washington State, US of A 3 litre box...that's 4 bottles $27.00
This cool climate Cab is blended with just a touch of Syrah. More of an overall crowd pleaser, this easy-drinker is medium bodied with soft, smooth tannins and hints of red fruit, spice, and vanilla. A tremendous value at less than $7 per bottle, this is the stuff that should fill your glass next to spicy marinated flank or skirt steak.
Tierra de la Castilla, Spain $9.50.
90 points Robert Parker's Wine Advocate...yeehaw *
 As 100% Spanish Tempranillo, this juice sees the inside of French and American oak for five months. Uncork the bottle before you light the grill and try to avoide the temptation to sip before dinner is ready. After some time to breath, this seņora surrenders with lots of intense black fruit, pepper, and touches of anise. Seriously over delivers on bang for your buck with a loooooong finish.
