Dear fun loving food heathens,
It will make you feel like you're six years
old. It will make you feel like you have never in your
life seen it before. Yet it happens every year. It
will make you both nervous and anxious at the same time. When
is it going to show? What am I going to do with it when it gets
here? Why am I rolling around in poison ivy looking for
mushrooms?
The first signs of edible life have reappeared in
Indiana. Beautiful crisp greens, sweet strawberries, a
variety of mushrooms, addictive asparagus and spring onions are
all showing off at the Goose.
If you like to eat and you don't feel like a
little school boy or school girl by now, then you might want to get
checked out.

Gunthorp Farms
Some friends of the Goose have been making a bit of
noise on Chicago tables for some time now. Gunthorp Farms can be found on such menus as
Blackbird, Trotters, Frontera Grill, Naha, Carnivale, Bistro
Campagne, Tru and Nacional 27 just to name a few.
And now, in the June issue of Chicago Magazine, the Gunthorp family (and their
animals) are featured in a seven-page spread entitled "Hello,
Beautiful!". Writer Michael Lenehan sums up Greg
Gunthorp's work with the following statement; "By raising his
pigs the natural way, an Indiana farmer has defied the
industrial style of animal production and found a high-end market for
his gorgeous pork with some of Chicago's top chefs."

We worked hard prior to our opening to convince Greg
we were worth the trip to Indianapolis. Finally he agreed and
now you too can cook with the pros and find the naturally
raised animals (including beautiful pork, plump chickens, and
juicy Pekin duck) at Goose the Market.
If you haven't tried their pork yet, what are you
waiting for? After all, it is not the other white meat....and
we like it that way!!!

Spring
Made Us Do It

Soups
are out, Salads are in
We just received strict orders from
Mother Nature aka Lil' Miss Natty. In light of new fresh, crisp, and increasing
varieties of local options, we are forced to halt soup
production. Effective immediately, she is forcing us to
create unique salad combinations for the foreseeable future.
We are committed to using as many locally
grown, full-flavored, spray-free, pesticide-free, chemical-free,
drug-free and poison-free ingredients (everything's free, except
the salad) as we can get our hands on. These
ingredients will be sourced from such places as Good Life Farms, Homestead Growers, Stout's Melody Acres,
Swiss Connection, Capriole, Garwood Orchards, Tuttle Orchard, and Traders Point Creamery. Just like the
products that we have to work with, the salads will change
often and are not likely to repeat themselves. Keep an eye
on the Gooseblog for the most up-to-date combinations.
We will also be offering the bounties of local
gardens in their prime at the shop. Our produce will blow
up as the gardens themselves explode. To help keep you
from wetting your pants with excitement, here is a cheat sheet to keep on track with
what's growin' on in Indiana, brought to you by the
wonderful source www.going-local.com.

chilled soups such as gazpacho when appropriate
