Tasso: This spicy, peppery, smoked pork shoulder is a staple in Cajun cooking.
Andouille: The Goose goes bayou on our own andouille. Lightly smoked over pecan wood, this pork sausage is rich with cayenne, mace, clove, allspice and garlic.
Cajun Shrimp and Crawfish Sausage: A Goose creation, this smooth, mousseline style sausage brings just a little heat with white pepper before we poach the links in shrimp stock.
Hog's Head Cheese (aka Souse): No cheese here. This traditional Southern Louisiana dish is part of Slow Food's Ark of Taste. The Goose is keeping the tradition alive by satisfying our cravings. Our recipe starts with a Gunthorp Farms hog's head, spiced generously with a house-made blend, poached, and molded in a form. Great for Po'boys! |
