The Meat Monger/Butcher assists guests in selected proteins from Goose’s fresh meat cases by engaging customers with a friendly demeaner, excellent product knowledge, and an infectious excitement for delicious products. They cut sub-primals and whole animals into display portions, trim cuts to order per guests’ specifications, make sausages, smoke meats, monitor inventory and make prep plans, create enticing displays, and more. Shifts include doing dishes, cleaning cases, mopping floors, and maintaining Goose’s high standards for organization and cleanliness. Enoteca staff must have or be able to get the required license for serving alcohol.
